
This is my chili casserole. It’s my latest success story when it comes to making a variation of a favorite meal. In this case chili. A favorite dish I love and have never made and want to is lasagna. When I got married I was prepared to make it until my husband told me he didn’t like pasta. That stopped me from ever trying it and only eating it at potlucks and when I visited friends and neighbors for lunch or dinner.
One of these days I might make it and hope it turns out as well as those I’ve eaten from my friends and neighbors. My mother never made it, so I didn’t know how good it was until I had it for the first time. It’s on my bucket list of foods to try before I die.
I love experimenting with food to create new dishes. I do it often, especially when food is stretched thin at the end of the month. Or when I want something new and look through my fridge and cupboards to see what I can come up with. You never know, I might post another successful dish soon. Anything is possible.
