
One of my favorite meals is tuna mac and cheese, pictured above when I made it for a potluck. It’s a simple recipe – gluten free elbow pasta, albacore tuna, onion, oat milk, and shredded cheese. When I make it for myself, I have a small one serving oven safe casserole dish I make it in and put in the oven for 45 minutes.
My second favorite meal is salmon with jasmine rice. I always have salmon in the freezer. My third favorite meal is pot roast. I made it recently for the dinner party I had for my youth pastor and her family.

You can see the potatoes and carrots in the crock pot. It turned out delicious. This was a New England pot roast. I usually make a less elaborate pot roast with carrots, onions, potatoes and sugar free barbecue sauce. This one didn’t have the onions because her husband is allergic to them or the barbecue sauce. I have a pot roast in the freezer waiting for me to make it. I only need to buy the barbecue sauce. I’ll most likely make it again after Thanksgiving leftovers are eaten.
